 BANANA CREAM PIE
*Make a Flakey Pie Crust and bake it.
When the pie crust is baked, make the filling.
Blend the following in a blender until creamy:
  • ½ cup cashews (boil the first and rinse before putting them in the blender)
  • 1 cup of water
Set aside.
Then put the following in a saucepan:
  • 1 cup of water
  • ¾ to 1 cup of dried pears
Boil for 3 minutes and then add this to the blender.
Then add and blend:
  • 1 tsp vanilla
  • 3 ½ T. arrowroot
  • Pinch of salt
Slice 4 medium bananas into the cooled pie crust. If the crust is hot, it will turn the bananas brown.
Pour the blended mixture into a saucepan and cook on medium, stirring constantly until thick. This may take 8-10 minutes.
Then pour the thickened mixture over the bananas and chill.
