BANANA MUFFINS
In a bowl stir together the following:
Add water if needed, if it is to thick (Cupcake consistency)
Pour into muffin tins greased with lecithin slicker. Tins should be about ¾ full.
Makes 10-12
Bake at 350 degrees for 30 to 35 minutes (approx..) test with sharp knife. If it comes out with wet batter on the knife, bake an additional 5 minutes and check again.

- 3 large bananas mashed (It helps to do this first before putting in the other ingredients)
- ½ cup coconut milk
- ½ cup sucanat
- 2 T. ground flax seed (In a separate bowl soak the flaxseed in 6 T of water for 10 minutes)
- 1 tsp. vanilla flavoring
- ½ cup pecans chopped
- 2 cups pastry flour or spelt flour
- 1 tsp. salt
- 1 T. energy baking powder (put this in last)
- 1 tsp. lemon juice
