Crispy Oat Cookies
Blend the following in a blender until creamy:
       1/3 cup almonds
       ½ cup water

Then add:
  • 1/3 cup of olives
  • 1 tsp. vanilla
  • 1/3 cup honey
  • ¼ tsp. salt
Put the following in a bowl and mix together:
  • 1 ½ cup quick oats
  • ¼ cup oat flour
  • ½ cup raisins
  • ¼ cup currants, washed
  • 1/3 cup chopped walnuts or pecans
Add the blended to the dry ingredients and mix well.
Drop by large tablespoonfuls unto a parchment lined cookie sheet or casserole dish. Flatten with a fork and bake in a preheated 350° oven for 30 minutes.
Let the cookies cool before taking off casserole dish or cookie sheet.
