FRUIT SQUARES
Preheat oven to 350֯F.
Outer Layers:
Fruit Filling:
Combine flour, oats, salt, water, and walnuts.
In a separate bowl mix the olive oil and sucanat. Add the olive oil mixture to the flour.
Press half of the mixture into the baking dish.
Cook the dates in the water until they can be mashed into a paste.
Let the dates cool. Spread the paste over the crumb mixture. Then spread the rest of the crumb mixture over the dates and press it gently.
Bake for 25 minutes.

- 1 ½ cups whole wheat pastry flour
- 1 ½ cups oats, quick
- ½ tsp. salt
- ½ cup chopped walnuts
- 1 – 2 T. water
- ½ cup extra light olive oil
- ½ cup sucanat (or sweetener of choice)

- 2 ½ cups of pitted dates, (you can use any dried fruit)
- 2 ½ cups water
