PINEAPPLE-DATE SQUARES 

Crumb mixture in a bowl: 
  • 2 cups quick oats
  • 1 cup oat flour
  • 1 cup coconut, unsweetened and shredded
  • ½ cup sunflower seeds
  • ½ tsp. salt

Emulsify and add to crumb mixture: 
  • 1/3 cup oil or ½ cup olives, blended
  • 3 T. honey, liquid
  • 1/3 cup pineapple juice

Mix well, tumbling through fingers. Press half of the mixture into a 7-1/2” x 11-1/2” Pyrex dish.

FILLING 

Cook until thick: 
  • 2-19 oz. can pineapple, crushed
  • 1 ½ cups of dried pear

Place filling on crumb mixture evenly.

Cover with remaining crumbs and press lightly but firmly. 

Bake at 350֯F. for 35 minutes.
