PINEAPPLE-DATE SQUARES
Crumb mixture in a bowl:
Emulsify and add to crumb mixture:
Mix well, tumbling through fingers. Press half of the mixture into a 7-1/2” x 11-1/2” Pyrex dish.

FILLING
Cook until thick:
Place filling on crumb mixture evenly.
Cover with remaining crumbs and press lightly but firmly.
Bake at 350֯F. for 35 minutes.

- 2 cups quick oats
- 1 cup oat flour
- 1 cup coconut, unsweetened and shredded
- ½ cup sunflower seeds
- ½ tsp. salt
Emulsify and add to crumb mixture:
- 1/3 cup oil or ½ cup olives, blended
- 3 T. honey, liquid
- 1/3 cup pineapple juice
Mix well, tumbling through fingers. Press half of the mixture into a 7-1/2” x 11-1/2” Pyrex dish.

- 1-19 oz. can pineapple, crushed
- ¼ cup figs or prunes, cut up
- 1 ¾ cup dates, cut-up
Place filling on crumb mixture evenly.
Cover with remaining crumbs and press lightly but firmly.
Bake at 350֯F. for 35 minutes.
