PINEAPPLE-FRUIT SQUARES
 
Crumb mixture in a bowl:
  • 2 cups quick oats
  • 1 cup oat flour
  • 1 cup coconut, unsweetened and shredded
  • ½ cup sunflower seeds
  • ½ tsp. salt
 
Emulsify and add to crumb mixture:
  • ⅓ cup oil or ½ cup olives, blended
  • 3 T. honey, liquid
  • ⅓ cup pineapple juice
 
Mix well, tumbling through fingers. Press half of the mixture into a 7-1/2” x 11-1/2” Pyrex dish.
 
FILLING
Cook until thick:
  • 2-19 oz. can pineapple, crushed (do not drain)
  • 1 ½ cups of dried pear
Then put in the blender and cream.
Place filling on crumb mixture evenly.
Cover with remaining crumbs and press lightly but firmly.
Bake at 350֯ F. for 30-35 minutes.
