SCALLOPED POTATOES 
 
Blend in a blender until creamy: 
  • 1 cup of raw cashews 
  • 1 cup of water 
Add and blend: 
  • 2 teaspoons mock chicken seasoning
  • 2 Tablespoon + 1 teaspoons arrowroot powder (cornstarch works as well)
  • 2 teaspoons salt
  • 1 ½ cups of water
Then add: 
  • 1 ½ cups of water
Wash, peel and thinly slice: 
  • 8 medium to large potatoes
  • 1 diced onion
In a 9 x 13 casserole dish combine alternately, layers of milk mixture, potatoes and onions—beginning and ending with milk mixture. Make sure liquid still covers potatoes when you’re done.
Cover and bake at 375° for 30 minutes, then remove cover and bake at 350° for 45 minutes.
