SPINACH QUICHE

Blend until creamy:
  • ½ cup cashews (boiled and rinsed before using)
  • ½ cup water

Add and blend:
  • 1 tsp. garlic salt
  • 1 tsp. salt
  • 1 T. arrowroot
  • 1 T. brown rice flour
  • 1 T. cornstarch
  • 2 tsp. onion powder
  • ½ cube of water-packed tofu, rinsed

Cook in boiling water until tender:
  • 1-10 oz. package of frozen spinach, then drain well

Put blended mixture in a bowl.

Fold in the following:
  • spinach
  • 1 tsp. dried chives
  • 1 T. soaked dried onion flakes

Pour mixture into a Flakey pie crust.

Bake at 350° F. for 50 minutes.
