WHOLE FOODS CHILI BEANS
 
  • Soak 4 cups of Small Red Beans overnight or for at least 8 hours
            (put in a large bowl and make sure water is at least double)
  • Drain and rinse well
  • Put in a large pot and fill with water, 4-5 inches above the beans
  • Cook on medium heat for 40 minutes
  • Then add:  1 T. of Sea Salt, or to taste
                        1 tsp. Sage
                        ½ T. Onion Powder
  • Let boil until beans are soft
While beans are cooking prepare the sauce
In a pot add the following:
  • 1 ½ T. Minced Onion
  • ½ T. Minced Garlic
  • 1T. Chives
  • 2 ½ T. Water
  • 2 T. Extra-Virgin Olive Oil
Stir and let sit for 5 minutes to rehydrate
Then sauté over low heat for a few minutes until soft and fragrant – Do not let brown
Then add the following and sauté over low heat for 5 minutes:
  • ½ medium Red Pepper - diced
  • ½ medium Yellow Pepper - diced
Then add the following:
  • 1 can of 28 oz. Crushed Tomatoes
  • 1 3/4 tsp. Oregano
  • 1 ½ tsp. Paprika
  • ½ T. Parsley
  • 2 tsp. Onion Powder
  • 1 tsp.  Garlic Powder
  • 1 ¼ tsp. Sea Salt
Simmer for 10 minutes, taste and if tomatoes are too acidic, add 1 T. of Honey
Continue to simmer for 25 minutes, stirring occasionally
Add tomato sauce to beans, mix in well and then simmer for an additional 15 minutes
